Feels like winter, time for some yummy, hearty food to warm you up. Tracy makes an amazing Jerk Chicken at #creativecookskitchen. And you just have to team it up with some potato wedges and greens for the fully delicious experience. Now time to roll up your sleeves and get cooking!
- 1 tbsp Flour , 3/4 tsp salt, 3/4 tsp pepper- for best results use the whole spice and grind just before use
- smoked paprika 1 tsp
- 1/4 tsp dried ginger
- 2 tablespoon grape-seed oil
- 8 drum sticks
First we need to prepare the chicken....
Take 1 tbsp Flour , 3/4 tsp salt, 3/4 tsp pepper. This is best to use the whole spice and grind just before use so it’s lovely and fresh. Add smoked paprika 1 tsp and 1/4 tsp dried ginger. And most importantly we need 8 drumsticks and 2 tablespoons of grape-seed oil.
Coat chicken with oil in a clip lock bag by shaking it until covered, then add dried spices and shake, then add flour and shake to coat. Then place the chicken on a large shallow non-stick tray and cook @180 degrees for 20 to 30 mins or until cooked through to bone.
So while our chicken is cooking away we need to get on to the potato wedges. The potato of choice is a red potato but you can use what you have at home. Cut red potatoes into wedge shapes and
place in a microwave proof dish and cook until tender.
Coat with seasoned flour and then put on try and sprinkle over olive oil about 2 tablespoons flour, 1/2 teaspoon salt ad n 1/ tsp pepper to 4 medium sized potatoes. Pop them on an oven tray.
Then cook in a hot oven 200 degrees for about 15 to 20 mins.
Just before both the chicken and wedges are ready it’s time to cook up some stir-fry greens.
Stir fry greens such as Bok Choy, Choy Sum, green beans etc. Use a wok, get it really hot until it starts to smoke then add a blend of sesame oil and olive oil.
