Mothers Day Big Breakfast

Well Mothers Day is fast approaching so a couple of weekends ago I was playing with some ideas for you...
Does your mum like to be spoiled on Mothers day?
As a mum, with two kids who like to grow cook and eat with me or their Dad there is usually something in the works for special occasions as well everyday.
This recipe is a nice alternative to bacon and eggs, which is good as we have had to stop eating bacon, ham and pork as affects our tummies.
So I have used slow cooked brisket we had cooked earlier that week, but could definitely be left out for those who prefer plant based eating and more veg..
To start I make my own bake beans, this can be done ahead of time ,and can even be frozen. You can used a tinned bean or maybe soak your own.

 

Soaked beans or tinned work well
2 celery sticks
1/2  medium onion
2 cloves of garlic
1 cup bottle of pasta tomato based sauce
1/2 cup water
1 tablespoon white vinegar
2 tablespoons of Worcestershire sauce
1 tsp sugar
1 tsp Coriander
1/2 tsp Cumin seeds
1/2 tsp ground ginger
1/4 tsp ground cinnamon
Salt and Pepper to taste
add chili if you like it spicy, smokey Tabasco is nice ..
 

 

Saute all ingredients in pan, add beans and cook til it reduces to a thick consistency

 


Making my own Baked beans came from not being able to eat corn as lots of tinned versions contain extra fillers and or thickeners, also once you taste this version I think it will speak for itself.. 

 

Potatoes
Make your own hash browns , very easy and delicious
You can use any potatoes and you don't even need to peel it
I used red potatoes and choose ones of medium size , quality 1 per person
Microwave or boil your potatoes til tender but not soft, place somewhere to cool
Reason being is that potatoes release starch and it is more able to hold together naturally when not at mashed potato consistency , also looks pretty when strands are cooked together.
You can either cook as 1 and then cut before serving or do as individuals too
Once potato cool enough you can handle without burning your hands and then grate.
Coarsely grate the potato with skin on , some skim may go into the mix and that is fine however I find skin falls away easily and you can discard if preferred.
 

Cook your potatoes in a frying pan, your choice of oil or fat, if using butter add a dash of oil to prevent it burning

 

Tomato

Ripe tomatoes fried in pan after meat, and keep warm til you serve and add fresh herb on top, my choice is usually thyme but also recently tried Native Bush Mint. This was very tasty...
Meat I am using left over smoked brisket sliced thin, my hubby can not eat much pork so a nice alternative.  Its reheated in a pan or oven til ready to service. You can use any meat you like or eliminated if preferred.
Eggs Get yourself some nice fresh free range eggs or my favorites are produced by my cooks Last item to do if you like the meat flavor on your eggs can re use the pan if not rinse or use a fresh pan. - cook them the way you like your eggs, my favorites are classic sunny side up and or poached
